A Cistercian abbey founded in 1146, left to ruin for four centuries and brought back in the 1990s. You marry in the medieval chapel or the old church, eat under the arches of the cloister and dance in the monks' dormitory, which is a sentence that shouldn't work and somehow entirely does. Around it: lavender fields, olive groves, a secret garden and the Marta river valley running off in every direction. Sleep in the tower if you can claim it.
